Missing me? Oh my my, what to do? Had a real hectic schedule at office & that Hitler of a boss I have, didn’t let me a breather at all. I was down the dumps & completely drained of all energy. Yesterday after coming home I didn’t have the urge to cook but then I have a family to look after, so back to my favourite pots, pans & ladles... ahh! Now let me do up something that will be warm, energising & mood booster...Hmm! and yummy too...

Now let me do up something that will be warm, energising & mood booster...Hmm! and yummy too...

You know darlings let me share a secret, do not shy away from cooking when under stress & depression, because all the colours that we use in the process of cooking actually act as a catalyst in enhancing our mood, bringing cheer & joy. The reds, the yellows, the orange, the greens all add in their bits surprisingly to elevate the mood. So I thought of doing up a GOLDEN RICE SOUP ( passed on from my grand mom), a thick rice broth with loads of vegetables & chicken, a complete meal by itself , the golden yellow colour bringing in joy, happiness & laughter & a perfect mood up lifter for me to go back to the challenges of life. Here’s the recipe for you too...

INGREDIENTS

(Can add in more vegetables if you want)

  • 300-400 g of chicken mince or boneless chicken pieces(optional)
  • One large onion diced
  • A few cloves of garlic
  • juice of 1 lemon along with the zest
  • 3 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1-1 1/2 litre chicken or vegetable stock

(Either use stock by boiling the veggies & meat or use vegetable & chicken cubes to prepare the stock)

  • 100g basmati rice
  • salt and pepper to taste

Method to prepare Golden Rice Soup:

  • First of all switch on the music system Smile, pick up a knife & cut all the vegetables, wash them & peel them if you want. After that finely dice them.
  • Pour in the olive oil in a pan & light the stove. Quickly add in the crushed cloves of garlic & then add in the veggies, chicken & lemon zest. Stir to coat the oil & zest & cook on a gentle heat for at least 5 minutes. Keep stirring to avoid burning & sticking
  • Once the veggies have softened, add the turmeric, the stock (in case you do not have stock, you can add in normal water that has been warmed a little), the lemon juice & stir to mix.
  • Slowly tip in the rice that has been washed & soaked for ten minutes, give it a good mix. Cook without the lid for 15 -20 minutes, stirring occasionally till the rice & veggies are soft & tender. Add in the seasoning (salt & pepper), taste & adjust.
  • Cover to simmer on light heat, put on the music a tad bit higher in volume & enjoy the ten minutes

Now take out the bowls, tip in some finely chopped coriander into the pan & hey! You are ready to pour in the yummy soup. You can add lil butter to the kid’s portions if you want. Can top up with a few dry roasted nuts if you want.

Before I bid bye let me share one more secret, a "beauty tip".

While waiting for the meal to cook you can just take a few drops of olive oil & apply to the skin on your hands & face. Olive oil is a natural moisturiser & makes your hands soft & silky. Olive oil traps in the moisture & works wonders for dry & chapped skin!!!
