- Dry ginger or Saunth - 100 gms
- Black pepper(kalimirch) - 100 gms
- Cloves(laung) - 10 gms
- Cinnamon (Dal chini)- 10 gms
- Green cardamom (Elaichi) - 10 gms
- Mace (Javitri) - 10 gm
Black cardamom (badi elaichi) & a little nutmeg (jaiphal) is optional.
Gind all of the above mentioned spices into a fine powder & store in an airtight container without any trace of moisture.
In a sauce pan, bring 2 cups of water to a boil. Add 2-3 tablespoons of strong black tea leaves to the pan. You can also add 2-3 bags of good quality black tea instead, and stir a few times. Next, add two cups of milk and ½ a teaspoon of the masala powder and bring again to a boil, taking care to not let it boil over. Once it comes to a boil, remove from the heat and set aside for 5 minutes. In the pan you can now add the sugar to taste.
