Kashmiri Chai is prepared using green tea with a required quantity of milk.
Pour water in a pan. Add the cardamom, soda bi carb, tea leaves & boil. Lower flame & simmer for 4-5 minutes. In the boiling mixture add 2-3 cups of cold water to make 4 cups. Boil & then simmer again for 4-5 minutes. Remove, strain & set aside.
Now boil the milk with the powdered cardamom on a low flame & then add the prepared tea mixture (strained...kahwa) to the milk. Boil, lower the flame, add the salt & simmer for 3-5 minutes. Remove from fire, pour into cups. Top it with a spoonful of cream or malai & a sprinkling of pistachios or almonds. Serve with bakharkhaani. Enjoy!!
